Meatloaf Meatballs

Ingredients

1.5 lb 80/20 ground beef

1 large egg, beaten

1/2 c seasoned bread crumbs

1/2 yellow onion, chopped finely

2 garlic cloves, chopped

4 tb ketchup (this is my favorite brand), divided

6 dashes of Worcestershire sauce

1/4 c grated parmesan cheese

2 tsp dried oregano

1 tsp dried basil

1 tsp dried thyme

salt & pepper

EVOO

Instructions

Preheat oven to 375º.

In a small saucepan, heat EVOO and cook onions, garlic, and dried herbs for 5 mins or until soft. Set aside to cool.

In a medium bowl combine egg, 2 Tb ketchup, Worcestershire, bread crumbs, parmesan cheese, salt, and pepper. Stir to combine. It should have a paste-like consistency. Add in cooled onion/herb mixture and ground beef. Mix (hands are best) until fully combined.

On a parchment or foil lined baking sheet, roll meatloaf mixture into ~12 meatballs. Spread remaining 2 tb ketchup over the top of the meatballs. Bake for 35 mins or until cooked through.
