Ginger-y Turkey Curry [gf, df]
Ingredients
1 lb ground turkey
1 inch ginger, minced
1/2 yellow onion, diced
3 cloves garlic, minced
13.5 oz can coconut milk
3 green onions, sliced
1 cup fresh spinach, chopped
1.5 Tb curry powder
1/2 tsp cumin
1/4 tsp coriander
1/4 tsp ground turmeric
cilantro for garnish
Instructions
In a sauté pan heat avocado or coconut oil over medium heat. Add in ground turkey and cook until no longer pink. Add in onion, garlic and ginger, stir and cook for about 5 mins. Add salt, pepper, cumin, curry powder, coriander and turmeric, and stir. Cook for 5 mins until spices are fragrant. Add in coconut milk, bring to a boil then reduce to simmer. Cook for 15 mins until curry has thickened. Turn off heat and stir in spinach.
I like to serve over rice noodles and top with sriracha, green onions and cilantro.
