Fluffy Egg White Bites

INGREDIENTS

~1 pint or 500g egg whites from carton

1/2 c cottage cheese

1-2 bell peppers, chopped

2 handfuls of fresh spinach

4 oz feta cheese

INSTRUCTIONS

Preheat oven to 350 degrees.

In a blender, combine the egg whites and cottage cheese for about a minute.

Add chopped bell peppers, spinach, and salt and pepper to the blender. Pulse a couple of times. You do not want to make a smoothie with the veggies.

Use lots of cooking spray, and pour into muffin pans evenly. (These silicon ones are my favorite)

Top with feta cheese crumbles.

Bake for 18-25 minutes until they are puffy and lightly brown.

Remove and let cool before removing from pan.
