Asian Slow Cooked Beef

INGREDIENTS

Asian slow cooked beef

+2-3 lb chuck roast, cubed 

1/2 c low sodium soy sauce

1/4 c rice wine vinegar

3 tb sesame oil

2 c chicken bone broth

3 inches of ginger, sliced

5 cloves of garlic, smashed

1 onion, sliced

5 sweet mini peppers, sliced 

1/4 c cilantro

Green onion

INSTRUCTIONS

Heat cast iron pot, brown beef. Add soy sauce, vinegar, bone broth (enough to cover beef was roughly 2c), 2T of sesame oil (save 1T right before serving), ginger, garlic, cilantro, and onion. Bring to boil. Put in 350° oven for 3 hours, covered. Stir occasionally, add broth as needed. When beef is starting to fall apart add sliced peppers. Cook 30 more mins. Remove from oven, shred beef, stir in remaining 1T sesame oil, reduced “sauce” if desired. Serve over rice with green onions. *can also be done in a slow cooker
