Turkey Curry

INGREDIENTS

1 lb ground turkey

1 small yellow onion, diced

1 jalapeño, diced (leave the seeds in if you want it spicier)

3 garlic cloves, diced

1 or 2 inches of ginger, diced

15 oz coconut milk

2 tb curry powder

1 tsp ground turmeric

1/2 tsp cumin

1/4 c golden raisins (optional)

INSTRUCTIONS

In a large nonstick skillet, heat a neutral flavored oil (I like to use avocado oil) over medium-high heat. Brown turkey, breaking it into bite size pieces. You may need to add more oil as you go depending on if you use white or dark meat turkey.

Once the turkey is fully cooked, add onion, ginger, garlic, and jalapeño, and cook until softened.

To the pan, add curry powder, turmeric, cumin, salt and pepper, and stir. Cook the spices for about 2 mins or until fragrant.

Add coconut milk and raisins, and stir. Bring to a simmer, and then reduce heat to low. Cook for a minimum of 15 mins.

Top with cilantro, and serve over rice, zucchini noodles, or with naan bread.
