[Hot Honey] Cowboy Caviar
Ingredients
Salad:
15oz black beans, rinsed and drained
15oz black eyed peas, rinsed and drained
1 jalapeño, seeded and finely diced
1 red bell pepper, seeded and finely diced
2 ears of fresh corn, kernels cut from the cob
1/2 red onion, finely diced
1/4 c cilantro, finely chopped
2 green onions, thinly sliced
Dressing:
1/4c avocado oil
1/4c red wine vinegar
2tbsp hot honey
1tsp chili powder
1 lime, juiced
salt & pepper
Instructions
Prepare and combine all of your vegetable/salad ingredients in a medium sized bowl. In a separate container combine all of your dressing ingredients. Add dressing and mix. Refrigerate for at least 1 hour. Serve with tortillas chips!
