Broccoli, Chicken & Rice Bake

Ingredients

1 TBSP avocado oil

1 small onion, chopped

1 rotisserie chicken, shredded

10 oz cream of chicken soup

~2 cups of chicken broth

1 cup white rice

1 frozen package of broccoli florets

1 cup cheddar cheese, shredded

1 tsp garlic powder

Salt & Pepper

Instructions

Preheat the oven to 375°. Heat oil in a large skillet over medium heat. Add onions and sauté. Season with salt, pepper, and garlic powder. Add in the rice, soup, and chicken stock*. Stir, bring to a simmer, and cover. Stir occasionally. Once rice is cooked, add in broccoli and chicken. Stir to combine. Turn off the heat. Add 1/4 of the cheese. Transfer to an oven-safe baking dish. Top with remaining cheese and bake until bubbly.
