Quarantine Freezer: Chicken & Broccoli
INGREDIENTS
2 chicken breasts (thawed)
16 oz frozen broccoli
1 lb Yukon gold potatoes
1 lemon (zested)
1/4 c of white wine
1 t Dijon mustard
1/4 c parm cheese (grated or shredded)
Olive oil
Salt
Pepper
2 tb Butter
INSTRUCTIONS
Preheat oven to 425° (for chicken and broccoli). These can be cooked in tandem.
Place frozen broccoli on a baking sheet, and bake in oven until almost thawed (takes about 10mins). Remove broccoli from the oven and set aside. Over the semi-cooked broccoli, drizzle EVOO, salt and pepper. Bake in the oven for 15 mins or until edges are brown and crispy. Remove from oven, sprinkle parm cheese and lemon zest, and toss.
Heat EVOO in pan on medium-high heat. Sear chicken breast on both sides (seasoned with salt and pepper). Put chicken in the oven to cook until chicken reaches 165°.
Once chicken is cooked, remove chicken from pan, and heat pan to medium heat. Deglaze with white wine, and whisk in Dijon and butter.
Serve over mashed potatoes.
