Accidentally Addictive Salad.

Ingredients

1 medium butternut squash, peeled and cubed

arugula

1 pork tenderloin

1 lemon, zested and juiced

1 clove of garlic, minced

1/2 tsp apple cider vinegar

1/4 cup mayo (I like avocado oil mayo)

2 Tbsp EVOO

2 Tbsp avocado oil

Salt and Pepper

Instructions

Preheat your oven to 400 degrees. Add butternut squash to a parchment-lined baking sheet, drizzle with EVOO, and sprinkle with salt and pepper. Bake in the oven for 30 minutes or until tender and golden.

In a cast iron skillet preheat 2 Tbsp of avocado oil over medium-high heat. Season the pork with salt and pepper on both sides. Sear pork on both sides, around 5 minutes per side. Transfer the pork to the oven, and bake for 10-15 minutes or until the meat registers ~137 degrees.

While the butternut squash and pork are baking, make the dressing. I cannot take credit for this dressing. It is from The Modern Proper (I omit the sugar).

Once the pork tenderloin is cooked, and rested, slice.

Assemble the salad with arugula, pork, and squash, then drizzle with lemon dressing.
